Strawberry Coconut Cake
I saw this on Pinterest, and it looks SOOO good to me! I can't wait to make it! From the website Candy Jamamas.
1 box white cake mix
4 TBSP. strawberry gelatin powder
2 TBSP. flour
1 tsp. baking powder
2 TBSP. sugar
3/4 cup vegetable oil
4 eggs
1/4 cup water
1/2 cup pureed strawberries
1 tsp. vanilla
1/2 tsp. coconut extract
1/2 cup fresh strawberries, diced
1 cup flaked coconut
strawberries for garnish
Preheat oven to 350 degrees.
Combine cake mix, gelatin powder, flour, baking powder and sugar. Mix in vegetable oil, eggs and water and pureed strawberries. Beat well. Stir in diced strawberries, vanilla and coconut. Pour into greased or lined 8 or 9-inch cake pans. Bake for 25-35 minutes, until toothpick comes out clean.
Allow cakes to cool for 10 minutes, then turn out of pans and cool completely.
Cream Cheese Frosting
8 oz. cream cheese, softened
2 sticks butter, softened
2 (16-oz.) boxes of powdered sugar
1 tsp. vanilla
Mix cream cheese, butter and vanilla. Add powdered sugar until desired consistency is achieved. You can add a small amount milk if frosting becomes too thick.
Frost middle and sides of cake. Top with whole strawberries for garnish.
VARIATIONS: Some people add a cup of chopped pecans to the cake and 1/2 cup of pecans, strawberries and coconut to the frosting! Sounds delicious!!
