Chocolate Crinkles


This is a beautiful cookie that will dress up any occasion, and has the benefit of not only tasting great but being low in fat!

2 cups sugar
1/2 cup vegetable oil
2 tsp. vanilla
4 oz. unsweetened baking chocolate, melted and cooled*
4 large eggs
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 cup powdered sugar

Mix sugar, oil, vanilla and chocolate. Add eggs one at a time. Stir in flour, baking powder and salt.

Cover and refrigerate for 3 hours. If you are in a hurry you can  put the dough in the freezer for 30 minutes.

Roll into approximately 1-inch balls and roll in powdered sugar.

Place on GREASED cookie sheet, 2 inches apart and bake at 350 degrees for approximately 10 minutes.

*if you don't have baking chocolate you can substitute cocoa powder and shortening as per the directions on the cocoa container.
