Yankee Cornbread


My mom always called this Yankee cornbread, because it was sweet. She always made Southern cornbread which is unsweet, and I loved it, but when I had this, I fell in love with cornbread all over again... LOVE IT!

1 cup milk
1/4 cup butter, melted
1 large egg
1 1/4 cup yellow cornmeal
1 cup flour
1/2 cup sugar
1 TBSP baking powder
1/2 tsp. salt

Heat oven to 400 degrees. Grease bottom of 8X8 pan, or 12 muffin cups.

Beat milk, butter and egg. Stir in other ingredients by hand. Batter may be lumpy.

Pour into pan. Bake for 20-25 minutes, though I start checking them at 15 minutes. They are done when toothpick comes out clean.
