Quick and Easy Muffins


This is a basic muffin recipe that can be adapted in uncountable ways! Add nuts, chocolate chips, coconut, dried fruit, cinnamon, bacon and cheese, whatever sounds good to you, throw it in!

2 cups flour
3 tsp. baking powder
1/2 tsp. salt
3/4 cup sugar
1 egg
1 cup milk
1/4 cup vegetable oil.

Mix all dry ingredients. In separate measuring cup, combine all wet ingredients. Form a well in your flour mixture, and then add wet ingredients all at once. Mix with fork until just combined. Do not beat. Batter will be lumpy. Add in whatever mix-ins sound good to you. Top as desired.

Bake at 400 degrees for 15-25 minutes, until browned. I f you are using a dark non-stick pan start checking on them sooner, around 12 minutes.

Ideas for mix-in:  Blueberry, cranberry nut, banana, apple cinnamon, chocolate chip, white chocolate chips, cinnamon, poppy seeds, bacon and cheese, cheese and green onion, (decrease sugar for savory muffins), strawberries, peaches.. the list is endless.

Ideas for toppings: toasted almonds, cinnamon crumble topping (hard butter mixed with brown sugar and cinnamon), sugar, cinnamon and sugar. chocolate chips, bacon...
