Crockpot Jambalaya

With our hectic schedule these days, I need a variety of good crockpot recipes that can be ready to go when we are! Here is a yummy crockpot Jambalaya recipe from the Allrecipe's website. Yummy! 

1 lb. skinless, boneless breast halves, cut into cubes
1 lb. andouille sausage, or summer sausage
28 oz can of diced tomatoes with juice
1 large onion, chopped
1 large green bell pepper, chopped
1 cup chopped celery
1 cup chicken broth
2 tsp. dried oregano
2 tsp. dried parsley
2 tsp. Cajun seasoning
1 tsp. cayenne pepper
1/2 tsp. dried thyme
1 lb. frozen cooked shrimp, without tails

In crockpot mix all ingredients except shrimp. Cook on low 7-8 hours, or on high 3-4 hours, adding shrimp in for the last 30 minutes of cooking time. 

Serve over cooked rice.
