Simple Chicken Noodle Soup

Here is a simple chicken noodle soup recipe that is oh so yummy and yet easy to make! Everyone needs a little chicken noodle soup from time to time! Adapted from a recipe in my Goodness Gracious cookbook.

6-7 cups water
2 chicken breast, frozen is fine
1/2 cup chopped carrots
1/2 cup chopped celery
1 small onion, chopped
1 bay leaf
6 oz. uncooked egg noodles
1/4 cup flour
1/2 cup cold water
salt and pepper to taste

Bring water and chicken to boil. Boil until chicken is cooked and tender. Chop chicken and return to broth. Add carrots, celery, onion and bay leaf. Bring back to boil. Add uncooked egg noodles and cook until tender, about 7-8 minutes. Combine flour and cold water in small cup and mix until smooth. Add to soup, and allow to cook for about 3 minutes, until soup thickens. Add salt and pepper. Remove bay leaf and serve!

VARIATIONS: you can use chicken broth and 2 cups cooked chicken if you want to save few minutes.
Add 1-1 1/2 cups frozen mixed vegetables. Add a small cubed potato. Add a pinch of poultry seasoning.
