Pulled Pork is one of my all-time favorites! This recipe came from the Good Housekeeping website.
1 medium onion, chopped
1/2 cup ketchup
1/3 cup cider vinegar
1/4 cup packed brown sugar
1/4 cup tomato paste
2 TBSP sweet paprika
2 TBSP Worcestershire sauce
2 TBSP yellow mustard
1 1/2 tsp. salt
1 1/4 tsp. pepper
4 lbs. boneless pork shoulder blade roast (pork butt), cut into 4 pieces
In 4 1/2 to 4 quart crockpot, combine onion, ketchup, vinegar, brown sugar, tomato paste, paprika, Worcestershire sauce, mustard, salt and pepper. Mix well. Add meat, and turn to coat all sides.
Cover and cook on low 8-10 hours until pork is very tender.
Transfer pork to bowl and shred. Turn crockpot on high and allow sauce to boil and thicken. Return shredded meat to sauce, stirring to combine.
Serve on buns, with pickles, onions and coleslaw!
