Soda Cracker Candy

This is today's recipe of the day on the Allrecipes site. It sounds fabulous! I love toffee, and I can't wait to give this a try.

1 10 oz. package saltine crackers
1 1 /2 cups butter (some reviewers said they just use one cup butter)
1 1/2 cup packed brown sugar (reviewers said they also just used one cup butter
2 12oz. packages of chocolate chips (some reviewers only used one package)
chopped nuts, almonds, pecans, whatever you like (optional)

Heat oven to 400 degrees.

Line cookie sheet with foil. Spray with non-stick cooking spray.

Line bottom of prepared cookie sheet with saltine crackers, covering entire bottom of pan.

In saucepan, combine butter and sugar and bring to full rolling boil. Boil 3 minutes. Pour over crackers.

Bake in 400 degree oven for 5 minutes.

Sprinkle chocolate chips over hot toffee, allow to melt a minute and then use a spatula to spread around. Top with chopped nuts if desired.

Chill in refrigerator for 3 hours, then break into pieces. Store in airtight container in fridge.

VARIATIONS: Some reviewers said they omitted the nuts and used sprinkles. Others used half white chocolate chips with regular ones and made a marble effect. One woman used graham crackers instead of saltine. It sounds like it is a very versatile recipe.
