Buckeyes

My kids think these are a MUST every Christmas! It's one of those things I made one year and they requested the next year and before I knew it, it was a tradition... If you like peanut butter and chocolate, this one is for you!

2 cups creamy peanut butter
1 cup butter, softened
4-5 cups powdered sugar
2 cups semi-sweet chocolate chips
1/3 cake paraffin wax, or 1 TBSP shortening

Combine peanut butter and butter. Mix until smooth. Gradually add sugar. You want your dough to be stiff, easy to handle, but not crumbly or hard. Mix thoroughly.

Line cookie sheet with wax paper. Form mixture into 1 inch balls and place on cookie sheet. You can dip your hands in powdered sugar to keep mixture from sticking to your hands. Chill one hour.

Melt chocolate chips and wax or shortening. I use the microwave at short 20 second intervals, stirring frequently.

Using a toothpick, pick up each ball and dip into chocolate mixture, place back on cookie sheet lined with wax paper. Smooth over toothpick hole if desired.
