This is the best cake EVER! Another time tested, "great every time" recipe given to me by my mother-in-law. You will get many compliments on this one!
2 cups flour
2 cups sugar
2 eggs
1 tsp. baking soda
1 tsp. vanilla
1/2 cup pecans
20 oz. can crushed unsweetened pineapple with juice (you will use the juice, don't drain!)
Simply mix all ingredients together in a bowl. Pour into ungreased 9X13 cake pan.
Bake at 350 degrees approximately 35 minutes.
ICING:
1 stick butter, melted
8 oz. cream cheese, melted
1 3/4 cups powdered sugar
1/2 cup pecans
1 tsp. vanilla
Mix all icing ingredients and pour over warm cake.
