Easy Chocolate Mousse

Valentines Day is right around the corner. Here is a recipe for a decadent dessert just right for the occasion! WARNING! This recipe may be addictive!!

3 oz. unsweetened chocolate squares
1/3 cup water
3/4 cup sugar
1/8 tsp. salt
3 egg yolks, beaten
1 tsp. vanilla
2 cups heavy cream

Melt chocolate in water on stove top over low heat. Blend. Add sugar and salt. Simmer 3 minutes, stirring constantly. Remove from heat.

Slowly stir in egg yolks, stirring constantly. Add vanilla. Allow mixture to cool to room temperature.

Meanwhile, whip heavy cream in large bowl until stiff peaks form. Gently fold whipped cream into cooled chocolate mixture. Spoon into glass dishes and refrigerate until set. Enjoy!
